In Abruzzo (east of Rome on the Adriatic and in the Appenines) spaghetti alla chitarra is the main thing - “alla chitarra” means something like “guitar style”.

Here you will find exactly such a guitar to make spaghetti. This guitar is a wooden box over which metal strings are stretched tightly like a real musical guitar. Place the strip of pasta dough over these strings and press against the wires with a rolling pin so that the spaghetti falls down in strips in a square shape.
Our guitar is strung on both sides. On one side the strings are tightly strung, about 2,5 mm, ie for thick spaghetti or if the dough band is very thin tagliolini. On the other hand, the strings are more spaced, about 5 mm. Ie on this page you can make tagliatelle alla chitarra.

Material: made of beech wood, untreated. Strings made of Inox (stainless steel/food safe). Handcrafted from Italy. Due to the direction of growth of the beech wood, when sawing out the clamping slots on almost all guitars, these small bumps occur at this point. These small, rough spots are not a defect, but a sign of handwork according to the manufacturer. Just rub it dry and smooth it out with a brush so that the guitar doesn't warp.
