This flour is so special because it is one of the so-called ancient grasses.
Ancient grasses are the varieties that are not intended for intensive agriculture compared to today's common varieties. “Antik“: can therefore also be translated as “without any genetic modification”, which is why these varieties are often easier to digest, especially for people with intolerances.

Senatore Cappelli is one of the most important and best-known ancient Italian grasses.

It was bred at the beginning of the 20th century by Nazareno Strampelli, an Italian grain researcher. The variety is named after Senator Raffaele Cappelli, who provided extensive financial support for the project. Until the 60s, Senatore Cappelli was one of the most popular types of durum wheat in Italy. Senatore Cappelli is characterized by its intense scent and special taste. However, the cultivation of the ears, which can be up to 1,8 meters high, is particularly time-consuming, which is why this grass was almost completely displaced, but is now being increasingly cultivated again - on a small scale - and thus preserved. This flour is traditionally used for bread, pizza and sweets.
