La Divina – hand crank machine for gnocchetti sardi, cavatelli and orecchiette

In Italy, this pasta machine has long been an insider tip under the name “Demetra Cavatelli Pasta maker”. It has been available on the non-Italian market since this year (100% identical) as “Divina”. With this little pasta miracles you can do it within minutes Cavatelli, Gnocchetti sardi, or Orecchiette manufacture.

The way it works is brilliantly simple. You form dough strands from the pasta dough and put them into the machine. Depending on the position in which you insert the dough strand into the nylon rollers, the noodle shape is created. This way you can get smooth cavatelli, or striped gnocchi sardi or gnocchi sardi with a crisscross pattern. If you turn the pasta inside out, you get orecchiette that is in no way inferior to those made by hand.

The machine can be fixed to the kitchen worktop using a suction cup base.

The weight is approx.  1,7 kg, so a real lightweight. The bowl can be easily unscrewed, so the pasta machine can be stored in a particularly space-saving manner.

The “Mady in Italy” is really the program here. If you are looking for a machine such as a Thermomix that is delivered without scratches or defects, this machine is not the right choice. It is a machine that has been produced in very small series by the Italian company Franceschi for many years. This means that it is not a mass-produced product; clear traces of production can be seen in the processing. As is often the case with Italian products, the machine is really ingenious, well thought out and functional. It works so well that it is sometimes even used in restaurant kitchens...

Recipe:
100 gr. Semola di grano duro rimacinata (or durum wheat semolina)
50 gr. lukewarm water
(Adjust the quantities depending on the number of people, I would calculate 100-150 grams of semola per person. This means that if you want to make pasta for 2 people, then if you are slightly hungry use 200 grams of semola and 100 grams of lukewarm water or if you are very hungry, 300 grams . Semola and 150 gr. lukewarm water)

Knead the dough and let it rest at room temperature, covered with a kitchen towel, for about 5-10 minutes.
The dough is very soft. Process this into dough strands with a diameter of approx. one centimeter and flour them or pull them through Semola.
Then insert the strand of dough (or two or three strands of dough at the same time) into the front of the roller, crank it and the mussel noodles come tumbling out over the chute

Notes on cleaning: Please do not put the item in the dishwasher. Wiping with a damp cloth is sufficient.
