With this die you can kill two birds with one stone.

This die was originally developed for breadsticks.
Grissini are those delicious, irresistible bread sticks that everyone knows and don't need to be explained to anyone. While in Germany we actually only know one thick size, in Italy they come in different sizes. The thinner, the crispier. This die has a diameter of 6 mm, perfect for thinner breadsticks. In Italy you often get thin bread sticks in restaurants, for example to have something to nibble on while you wait for your food.

The passatelli dough consists of breadcrumbs, grated Parmesan cheese, flour, eggs, nutmeg and some people add a pinch of cinnamon as a secret ingredient.
Almost a poor man's meal. But what a delicious one!

When they come out, the thick strands of dough are placed on grated Parmesan and then added to the simmering soup (e.g. meat broth or chicken broth). You cook the passatelli directly in the soup. As soon as the noodles come to the surface, they are ready and are served as a side dish with the soup. In Italy this dish is called “passatelli in brodo”.

Why bronze:
Bronze dies were the traditional way of making pasta. The pasta made “al bronzo” can only be found rarely and usually only in selected delicatessens.
By pressing the pasta dough through the bronze matrices, the surface of the pasta is slightly roughened at the same time, making the pasta easier to grip. Ingredients for breadsticks:

200 g well-developed wheat sourdough (Lievito madre and sourdough)
500 g wheat flour type 550
200 ml water
30 g butter
50 g grated cheese, e.g. Gruyère or Parmesan
1-2 tbsp spices, e.g. caraway or cumin
80 g olive oil
10 g salt

Preparation:

Knead the dough with the food processor until the dough comes away from the edges.

Let rise for 1 hour.

Then knead briefly and put into the pasta maker and let it be served.

Place on baking paper and bake at 200 C top/bottom heat for 15-20 minutes until golden brown.

Stay close so they don't get too dark. The exact baking time depends on the dough thickness.

Let them cool down before they become crispy.

Possible variations: Add 1 crushed garlic clove; Crush 2-3 dried tomatoes in the spice mill and add thyme, extra salt, black cumin, sesame, parmesan, paprika or other spices, black cumin, sesame etc.

Sustainability:
The format of the pastide matrices was originally designed for the Kenwood Pastafresca. By using reducing rings, the bronze matrices can be used on almost all other common pasta machines. All you need is an adapter that fits the machine.

This means that even if over time the pasta machine is replaced by another model due to a defect or for other reasons: the bronze matrix remains and can continue to be used in the future.
