In Germany this noodle is usually found as a “corkscrew”, which corresponds to the Italian name “Cavatappi”.
But it is also often called Cellentani, this name is an allusion to the legendary Adriano Celentano, who did pirouettes in early films as lively as this noodle.

Attention: This die is one of the most complicated ever developed for the pasta maker. A perfect dough is therefore important.
Please pay attention to the following information:
– Please add a little more liquid than the pasta maker specifies – if the dough is too dry for the die, the pasta maker would have to work too hard, which could result in the die breaking.
- Please do not use flour with this die, only semolina or semolina - flour has the property that it wants to bring the ingredients together to form a kneading dough, then the dough is no longer crumbly, it clogs the outlets, slows down the output and in the worst case can break the die
– Please only use cold liquids. Warm liquids cause the dough to swell, then it is no longer crumbly, the effect is like using flour.
This means that you should only work with the die if you use enough (cold) liquid and the dough is moist and crumbly. Then nothing can happen.

POM is the abbreviation for polyoxymethylene, a guaranteed food-safe plastic. This is exactly the same material that is used in the Philips pasta maker matrices.

POM has the advantage that it doesn't weigh much and you can put the matrices in the dishwasher for cleaning.
Please note that the matrices are manufactured using micro milling. This is a complex process that enables delicate shapes. But small scratches from production and minor chips may be present, these are inevitable when using POM.
It is always advisable to add a little more liquid than the pasta maker indicates and to only use cold liquids. The dough should be moist and crumbly. You can find a standard recipe for our matrices here.
