A canello translated from Italian is a “tube”. The -one at the end, i.e. cannellone, makes it a big, thick tube.
We owe the cannelloni to Nicola Federico, who invented the large, thick tubes in 1907 while working as a chef in a restaurant on the Amalfi Coast. Cannelloni are now known not only throughout Italy but worldwide.
The most common method of preparation is certainly similar to that of a classic Bolognese with Bolognese and Bechamel. But ultimately you can prepare them however you like, whether with meat, vegetarian or vegan. What all recipes have in common: The cannelloni are baked “al forno” in the oven. POM is the abbreviation for polyoxymethylene, a guaranteed food-safe plastic. This is exactly the same material that is used in the Philips pasta maker matrices.
POM has the advantage that it doesn't weigh much and you can put the matrices in the dishwasher for cleaning.
Please note that the matrices are manufactured using micro milling. This is a complex process that enables delicate shapes. But small scratches from production and minor chips may be present, these are inevitable when using POM.
It is always advisable to add a little more liquid than the pasta maker indicates and to only use cold liquids. The dough should be moist and crumbly. You can find a standard recipe for our matrices here.
