This pizza dough mix consists of Italian flour Type 00, brewer's yeast and dried Lievito Madre, already mixed and measured. The use of dried sourdough guarantees an easily digestible dough, gives a unique aroma and taste and prolongs the aroma of the pizza. Preparation is very simple: Process 750 grams of pizza mixture plus 440 ml of room temperature water and a spoonful or two of olive oil into a dough. Let stand in a warm place until doubled in size (30-60 minutes). To make pizza, two round shapes with a diameter of 30 cm or two trays approx. 40 x 30 cm are enough. Farina di grano duro di grano Senatore Cappelli from the Molino Rossetto Here comes a very special flour: Farina (flour) di (from) Grano duro (durum wheat) Senatore Cappelli - I'll tell you more about Senatore Cappelli in a moment. The whole thing in organic quality and whole grain. So and now to Senatore Cappelli: This flour is so special because it is one of the so-called ancient grasses.
