POM Pacchero liscio die for Philips Avance. A paccheri is a typical southern Italian pasta. In terms of shape, it is ultimately a gigantic maccheroni, but still a touch smaller in diameter than a cannelloni. This pasta is particularly common in Naples. Paccheri used to be a typical poor man's food. Because they are so incredibly large, you only need a few of them to fill your plate. Paccheri comes in two versions: Rigato (with stripes) and Liscio (smooth) - this is the Liscio/smooth version. Pasta insert made of POM (polyoxymethylene - guaranteed food-safe plastic) for use in Philips Pasta Maker Avance, Plus, Premium and the 7000 series. No adapter or similar is required.   General information on compatibility and application The die is compatible with the following model numbers of the Philips Pasta Maker. The back two numbers can be any. HR2330/xx HR2331/xx HR2353/xx HR2354/xx HR2355/xx HR2356/xx HR2357/xx HR2358/xx HR2359/xx HR2365/xx HR2369/xx HR2375/xx HR2378/xx HR2380/xx HR2381/xx HR2382/xx HR2660/ xx HR2665/xx If you are unsure whether your model fits the dies, please send us a message, preferably with a photo of your pasta machine. We will respond to you promptly and tell you which matrices are right for you. POM is the abbreviation for polyoxymethylene, a guaranteed food-safe plastic. This is exactly the same material that is used in the Philips pasta maker matrices. POM has the advantage that it doesn't weigh much and you can put the matrices in the dishwasher for cleaning. Please note that the matrices are manufactured using micro milling. This is a complex process that enables delicate shapes. But small scratches from production and minor chips may be present, these are inevitable when using POM. It is always advisable to add a little more liquid than the pasta maker indicates and to only use cold liquids. The dough should be moist and crumbly. You can find a standard recipe for our matrices here. What else should you know? All of our matrices come from the Pastidea brand. Pastidea is an Italian company with years of experience in designing pasta matrices. Why an Italian company? Italians simply know the best about pasta and the like and know what to pay attention to. The design of a die is done by the Trafilaio, which translates to something like a die designer. A good Trafilaio knows exactly where on a die a little bit needs to be milled away so that the pasta has the right curve later. Maurizio of Pastidea has mastered this art par excellence. Immerse yourself in the world of your own pasta production with your palate friends. The taste of fresh homemade pasta is incomparably good.

Die made of POM Orecchiette small/piccole for Philips Avance. Orecchiette means something like “little ears” in German – they originally come from the Apulia region with the capital Bari. Traditionally they are made by hand, using a large wooden board, a knife and your fingers. You form a thin roll out of a piece of dough and cut off individual portions, then pull and push them forward at the same time with the handle of a kitchen knife and turn them into small mini ears. In our version, the orecchiette are formed by machine, the shape is slightly different than the hand version, but it is much faster and more relaxed. Size: 15,5 mm (small) Wall thickness: 1,1 mm Variant: smooth surface Pasta insert made of POM (polyoxymethylene - guaranteed food-safe plastic) for use in Philips Pasta Maker Avance, Plus, Premium and the 7000 series. POM Oktoberfest die for Philips Avance. Motif matrix for friends of the Munich Oktoberfest and lovers of Swabian and Bavarian pretzels. Attention: When using motif matrices, please always use enough liquid (approx. 10 grams more per 500 grams of dry ingredients than the pasta maker would like) and a maximum of one level teaspoon of binder (per 500 grams). If the dosage of the liquid is too low, the pressure when it is pressed out will be too high and the die could be damaged. POM matrix Mafalde Manfredini for Philips Avance. Mafalde bronze die, also called Manfredini. Tip: Mafalde and Reginette are very similar pastas. They both have a wavy edge that catches the sauce particularly well. The only difference is that the Mafalde are much wider than the narrow Reginette. Due to the impressive width of the Mafalde, they also cut a good figure as a side dish. While Reginette translates as "little queen", the Manfredi or Manfredini owe their name to a king: They were named after Manfred of Swabia, who was King of Sicily from 1258 to 1266 and had a reputation as a sweet tooth. The Mafalde were traditionally served with ricotta. The wavy edge holds the ricotta better. Die made of POM Grissini / Passatelli 6 mm One die – two completely different formats With this die you can kill two birds with one stone. This die was originally developed for breadsticks. Grissini are those delicious, irresistible bread sticks that everyone knows and don't need to be explained to anyone. While in Germany we actually only know one thick size, in Italy they come in different sizes. The thinner, the crispier. This die has a diameter of 6 mm, perfect for thinner breadsticks. In Italy you often get thin bread sticks in restaurants, for example to have something to nibble on while you wait for your food. Would you like to try something new? Then try making passatellis with this die. Passatelli are a soup addition. They are found primarily in Emilia-Romagna, Italy, but also in neighboring regions such as Urbino in the Marche region. The passatelli dough consists of breadcrumbs, grated Parmesan cheese, flour, eggs, nutmeg and some people add a pinch of cinnamon as a secret ingredient. Almost a poor man's meal. But what a delicious one! When they come out, the thick strands of dough are placed on grated Parmesan and then added to the simmering soup (e.g. meat broth or chicken broth). You cook the passatelli directly in the soup. As soon as the noodles come to the surface, they are ready and are served as a side dish with the soup. In Italy this dish is called “passatelli in brodo”. POM Gramigna die for Philips Pasta maker Avance. Gramigna (pronounced Graminja) is a pasta shape that originates in Emilia-Romagna. Many people may know Emilia-Romagna from their Adriatic holidays: Rimini, Cesenatico... but also many other cities worth seeing such as Bologna, Ravenna, Modena and Parma are located in Emilia. The shape of the pasta is very reminiscent of bucatini. In contrast to Bucatini, the Gramigna is cut short, its diameter of 4,5 mm is a few millimeters larger than that of Bucatini and in contrast to the Bucatini it is not a straight noodle, but the Gramigna has a curved shape. In terms of shape, they are very close to the noodles sold in Germany under the name Gabelspaghetti. Typically, Gramigna is consumed with sauces that can also be found in Emilia-Romagna. The best known here is certainly the Ragu Bolognese (Bolognese comes from Bologna, the capital of Emilia-Romagna) but a tomato sauce with salsiccia can also often be found together with Gramigna. Because the noodle is so short and small, it is a noodle that is also very popular with children in Italy. The noodle was traditionally always prepared with eggs, so it usually has a very yellow color. Only since dried goods became available in stores can they be found prepared with just semola and water. Pasta insert made of POM (polyoxymethylene - guaranteed food-safe plastic) for use in Philips Pasta Maker Avance, Plus, Premium and the 7000 series. Die made of POM Gnocchi di patate / potato gnocchi 24 mm for Philips Avance. Size: 24mm Thickness: 4mm This die shows how diverse a pasta machine can be. Gnocchi is not a pasta dish, but you can still prepare it easily with a matrix. Gnocchi are small dumplings made from potato dough. Every now and then you can also find variations with pumpkin, for example. The word gnocchi is pronounced NNjok-ki. Here you can clearly see the root of the Austrian word Nockerln. It is important to use floury potatoes and, if possible, stored products, not fresh potatoes (these contain less water). The less water there is in the potatoes, the less flour or semolina you have to add later, which results in a more intense potato taste. The chopped potatoes are only pressed out with the pasta machine (e.g. just press output in the pasta maker), but not kneaded. If you knead the dough too much, it could become sticky. Pasta insert made of POM (polyoxymethylene - guaranteed food-safe plastic) for use in Philips Pasta Maker Avance, Plus, Premium and the 7000 series. Die made of POM Fusilli A3 for Philips Avance.   Size: 10 mm Thickness: 1,1 mm One of the most famous noodles in Germany is fusilli. They are often called Spirelli, Rotini and rarely Eliche. The word fusilli comes from the Italian word “fuso”, which means spindle. In manual fusilli production, spaghetti is still wrapped around a spindle. According to legend, fusilli were invented at the court in Florence around 1550. The cook's son sat under the kitchen table and played with fallen pasta scraps that he wrapped around a knitting needle. These were the first fusillis. Not quite as clear, but much more likely, is the story that the Fusillis originated in southern Italy. At some point, spaghetti began to be rolled up in a spiral for drying, as this rotation made it much easier to dry and store. What is undisputed is that the twists mean that the sauce combines particularly well with the pasta. Fusillis are easy to dry. Fusillis are available with 2, 3 or 5 wings. You can see how many propeller blades the Fusilli has by the die shape and also the die name. Ie a Fusilli A2 has two wings, an A3 has 3 wings, an A5 has 5 wings. Die made from POM Fileja calabrese for Philips Avance. The unmistakable trademark of Calabria's cuisine is the Fileja calabrese. It is a very special pasta format. When I think of Fileja, I inevitably have an image in my mind of a nonna (grandma) who spoils her loved ones with these noodles Sunday after Sunday. Handcrafted, it takes a lot of work and craftsmanship. The dough is kneaded, divided into small dough sausages, these are pressed into a knitting needle and then rolled. And this noodle by noodle. To get a better idea of it, please take a look this video, around minute 2 you can see how they are rolled out. This knitting needle is called "Ferretto" in Italian. This is why these pastas are also called Fileja Calabresi al ferretto or Fusilli Calabresi al ferretto. Ultimately, the Filejas belong to the Fusillis family: Fusillis have their origins in southern Italy. At some point they began to wind pasta in a spiral to dry it, just like you do with these Fileja. The good news: With this die it is not nearly as time-consuming as manual production. On the contrary, the Filejas run through the machine quite quickly. And you don't have to make noodle by noodle; four noodles come out at the same time. Pasta insert made of POM (polyoxymethylene - guaranteed food-safe plastic) for use in Philips Pasta Maker Avance, Plus, Premium and the 7000 series. Die made of POM "Butterfly" or in Italian "Farfalla" for Philips Pastamaker Avance. The butterflies hatch in spring and accompany us throughout the summer. Therefore the butterfly is a symbol of spring. The time of year when everything turns green, the sun shines, the days are long again and everything wakes up from hibernation. Attention: When using motif matrices, please always use enough liquid (approx. 10 grams more per 500 grams of dry ingredients than the pasta maker would like) and a maximum of one level teaspoon of binder (per 500 grams). If there is too little liquid, the pressure when squeezing out will be too high and the die could break. POM die with bronze insert Cannelloni for Philips Avance, diameter of the noodle 3 cm. In the Italian-American region they are also spoken Manicotti man-uh-cot-tee  :-) A canello translated from Italian is a "tube". The -one at the end, i.e. cannellone, makes it a big, thick tube. We owe the cannelloni to Nicola Federico, who invented the large, thick tubes in 1907 while working as a chef in a restaurant on the Amalfi Coast. Cannelloni are now known not only throughout Italy but worldwide. The most common method of preparation is certainly similar to that of a classic Bolognese with Bolognese and Bechamel. But ultimately you can prepare them however you like, whether with meat, vegetarian or vegan. What all recipes have in common: The cannelloni are baked “al forno” in the oven. You can find my favorite cannelloni recipe with spinach and ricotta here: https://www.cookingchef-freun.de/?p=12470 And it's not just the filling ingredients that are flexible. Also with the ingredients for the pasta dough. For example, if you follow a gluten-free diet, you won't be able to easily find cannelloni in the supermarket. With this die you can also eat gluten-free cannelloni etc. etc. Die made of POM Canestro rigato for Philips Avance. A canestro (pronounced Ka-nes-tro) translates to "basket". This means that if Hansel and Gretel were as big as a Playmobil man, they could go into the forest with this basket :-) Since the pasta is relatively large, you can also fill it and then bake it in the oven "as a forno". This is the “rigato” variant, meaning it has stripes or grooves on the surface of the noodle. Die made of POM Bucatini 3,5 mm for Philips Avance. Bucatini is very large spaghetti, but with a hole in the middle (bucatini has the Italian word buco = hole). The Italians are very proud of their bucatini, you can find them all over Italy. Many say they come from Sicily, but I have also heard in the Rome area that they are typical of the region. Bucatini are very long pasta, if you let them out 30 cm long you are doing everything right. They are often served with rich sauces such as an Amatriciana or a Carbonara. But many vegetable sauces, for example with broccoli, can also be found with this pasta on the menu in Italian restaurants. There is another special feature that you should know: In Germany people eat macaroni or macaroni with a smaller diameter than in Italy, 0,3 - 0,5 cm diameter is the average for macaroni in Germany (in Italy, however, approx. 1 cm ). This Italian bucatini is very close to the German macaroni that is so popular with children. You just have to cut them shorter. And you shouldn't talk about it too loudly, because Italians don't like the change in pasta terms. But we're just talking to ourselves here, so please don't tell anyone :-) Pasta insert made of POM (polyoxymethylene - guaranteed food-safe plastic) for use in the Philips Pasta Maker Avance, Plus, Premium and the 7000 series. POM Bigoli die for Philips Pastamaker Avance. Ultimately, bigoli are nothing more than very thick spaghetti. They are found mainly in the Veneto area. When pronounced, they sound like this: Biiiiii-go-li. In the past, they were made by hand, which meant rolling out the firm pasta dough with a rolling pin, rolling the dough into a roll and then cutting it into very fine cuts with a sharp knife. In order to reduce the effort, the Bigolaro was invented (you can already see the similarity to the Bigolis from the name). It was a press shaped like a silicone cartridge. The dough is filled into the cartridge and there is a bronze matrix at the bottom, e.g. B. for bigoli and then you have to turn from above to press the dough through. I'll link the Bigolaro here so you can take a look: Bigolaro.  Quite a lot of work! This is possible with our matrix in combination with e.g. much more convenient and easier with the Philips pasta maker. Bigolis are traditionally eaten fresh as egg noodles. Incidentally, it is very rare to find it as a pasta in the supermarket. They are also becoming more and more of a rarity in Italy. This means that if you want to prepare bigolis, you really have to make them by hand as described above or you need this matrix. Die made of POM bee honeycomb for Philips Pastamaker Avance. Motif matrix for beekeepers, children and everyone who loves delicious honey and summer.
