Corzetti stamp made from robust pear wood

Corzetti, also known as Croxetti, are a Ligurian specialty that was already popular in the Middle Ages. Later, the Ligurians were so proud of their Corzetti that noble families even had Corzetti stamps made with their own family coat of arms.
The more robust the wood from which the embossing stamp is made, the better the pasta medals turn out. For this reason, pearwood was used for these stamps.

How it works:
Take a sheet of dough and use the stamp to cut out a round shape.
Now place this round dough shape on the decorative side (the side with the round circles) and press it from above with the motif stamp. This creates a coin-shaped pasta that is stamped on both sides.

The grooves and pattern make it particularly easy to absorb the sauce.
