- 750 g Flour (Farina 00)
- 230 ml milk
- 190 ml Water
- 10 g
- 15 g fresh yeast
- 40 g olive oil
- 15 g Salt
Instructions
- If you don't feel like pasta, how about the epitome of Italian street food - tigelle, also called crescentine. If you have a new Tigellier, you should grease the inside of the 7 molds before using it for the first time (you won't need this later) and dry it with absorbent kitchen paper. Please dry off the fat carefully! This will prevent oil residue from caking on and leaving stains on the tigellier. This means that no hot fat can leak out when turning. With I got along quite well with this recipe, I'm sure you'll tweak it, but that's a start.Stir milk, water, sugar, fresh yeast for 3 minutes with a K-hook at 35 degrees or stir in a bowl. Then add flour, olive oil, salt and knead with a dough hook at level 8 for 1 minutes, or knead by hand to form a nice dough. Cover and let rise for 4 hours.Cut out, then cover and let rise for another hour and bake without adding fat.
- The warm tigelle / crescentine is topped with mortadella, Italian ham or cheese, depending on your mood. La Cunza, also known as Pesto Modenese, is very typical - a spicy bacon pesto with rosemaryBy the way, the Tigelliere is pronounced "Titschelliere", but I could also call it a toastie maker, a bread roll maker or whatever.
